Crème brûlée equipment - the Manou gourmet gas burner

Even if you don't need it that often, it is still extremely important. Because whether it's crème brûlée or the Spanish version Crema Catalana, the cream tastes particularly delicious thanks to the contrast between the warm, crispy caramel crust and the cold cream. And the crispy consistency of the crème brûlée sugar layer is best achieved with a professional gas burner.

The gas burner is made of metal and has an adjustable flame.

  • 1.6 Place the refill gas cartridge on the refill valve with the filling nozzle facing downwards. Hold the

cartridge vertically and avoid lateral movements while applying sufficient pressure to trigger the filling

the filling process with sufficient pressure and the gas flows in audibly. Then replace the stand 6.

2. IGNITION, FLAME INTENSITY REGULATION, EXTINGUISHING

  • 2.1 Ensure that the function control 4 is in the ‘OFF’ position.

  • 2.2 Hold the burner in an upright position.

    in the ‘+’ or ‘ -’ direction.

  • 2.6 Regulating the flame hardness: The flame hardness can be changed from ‘hard’ (= maximum supply air - is preset) to ‘soft’ (comparable to a candle flame) by turning the supply air sleeve 5.
